Chicken & Broccoli  “Mac N Cheese” Recipes

Today I am going to share a few different recipes for the same meal. I like variety and seeing different ways to make something because we don’t all like the same things!

Check these out, pick the one you think you will enjoy the most and tweak it to fit your needs!!

The first recipe I found on another bloggers page, check the link out to see how she makes hers, it’s DELICIOUS. This is the original recipe I tried.

Chicken Broccoli Alfredo Stuffed Shells

Last recipe, but certainly not the least!

This recipe is from weight watchers and it looks very good! I’m definitely trying and I hope you do too!!!

Ingredients you will need:

  • 12 uncooked jumbo shells
  • 1 1/2 c. Tomato sauce
  • 2 lg. Egg whites, lightly beaten
  • 1 3/4 c. Ricotta cheese
  • 4 oz. roasted, skinless and boneless breast, diced
  • 3/4 c. Chopped spinach
  • 1 tsp. Garlic powder
  • 1 tbsp. Ground oregano (or other Italian seasoning)
  • 3/4 c. Shredded mozzerella cheese
  • 1/3 c. Grated Parmesan cheese

How to prepare:

Preheat your oven to 350 degrees F.

Cook your shells in boiling water as the instructions state. Drain them once they are done, and rinse them in cool water to prevent them from continuing to cook.

Spray your 9 X 13 in. Pan with cooking spray, then spread 1/2 c. Of tomato sauce evenly on bottom of pan.

To prepare your filling, use a large bowl and combine egg whites, ricotta cheese, chicken, spinach and your seasonings together. Stir in 1/4 cup of your mozzarella and Parmesan cheese.

Spoon your mixture into your shells carefully, and place them in a single layer inside of pan. Spread the rest of your tomato sauce on top and sprinkle with the remaining cheeses.

Bake about 30 minutes, until cheese is melted and sauce has thickened.
